When setting up a Canvas assignment, Teachers have to option to include a due date as well as availability dates. (For more, see the Canvas Guides: What is the difference between assignment due dates and availability dates?)

If an assignment has a due date and an "available until" date, students can submit until the "available until" date. Anything a student submits after the due date passes will be marked late. The assignment will be locked on the "available until" date.

However, if you are using the Legacy Turnitin integration, students will not be able to submit to the assignment after the due date unless you explicitly allow this in the Turnitin settings.
